  • 1 lb ground beef
  • 1 tablespoon olive oil

  • 1 can (15 oz) diced tomatoes
  • 1 can (15 oz) corn, drained
  • 1 can (15 oz) pinto beans, drained and rinsed
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 4 cups beef broth
  • 1 can (4 oz) diced green chiles
  • 2 medium potatoes, diced
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon cumin
  • Salt and black pepper to taste

Optional Toppings:

  • Shredded cheese
  • Fresh cilantro

Instructions

  1. In a large pot, heat olive oil over medium heat. Add ground beef and cook until browned, breaking it apart with a spoon. Drain excess fat if necessary.
  2. Add onion and garlic and sauté until softened and fragrant.
  3. Stir in diced tomatoes, corn, pinto beans, kidney beans, green chiles, and diced potatoes.
  4. Pour in beef broth and season with chili powder, smoked paprika, cumin, salt, and black pepper.
  5. Bring the soup to a boil, then reduce the heat and simmer for 30-35 minutes until the potatoes are tender and flavors meld together.
  6. Adjust seasoning as needed.
