Description

A delightful side dish that combines tender baby potatoes and fresh green beans roasted with flavorful ranch seasoning, crispy bacon, and fragrant parsley.

Ingredients

Scale

Potatoes:

  • 1 ½ pounds baby potatoes (halved)

Green Beans:

  • 1 pound fresh green beans (trimmed)

Seasoning:

  • 3 tablespoons olive oil
  • 1 packet (1 oz) dry ranch seasoning mix
  • ½ teaspoon garlic powder
  • ¼ teaspoon black pepper
  • ½ teaspoon salt
  • ½ teaspoon smoked paprika (optional)

Additional:

  • 4 slices bacon (cooked and crumbled)
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Preheat the Oven: Preheat the oven to 400°F.
  2. Prepare the Vegetables: In a large mixing bowl, combine the halved baby potatoes, green beans, olive oil, ranch seasoning, garlic powder, pepper, salt, and smoked paprika. Toss until everything is evenly coated.
  3. Roast: Spread the mixture on a large baking sheet in an even layer. Roast for 25–30 minutes, stirring halfway through, until the potatoes are golden and fork-tender and the green beans are lightly crisped.
  4. Finish and Serve: Remove from the oven and sprinkle the crumbled bacon over the top. Garnish with chopped parsley and serve warm.

Notes

  • You can use frozen green beans if fresh aren’t available; just thaw and pat them dry before roasting.
  • To make it vegetarian, omit the bacon or substitute with plant-based bacon bits.
