Description

These Coffee Cake Greek Yogurt Muffins are a delightful breakfast treat with a sweet cinnamon streusel topping. Moist and flavorful, these muffins are perfect with a cup of coffee or as an on-the-go snack.

Muffins:

  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup light brown sugar (packed)
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup plain Greek yogurt
  • 1/3 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup milk (any kind)

Streusel Topping:

  • 1/3 cup light brown sugar
  • 1/3 cup all-purpose flour
  • 1/2 teaspoon ground cinnamon
  • 2 tablespoons cold unsalted butter (cut into small cubes)

Instructions

  1. Preheat oven and prepare muffin tin: Preheat oven to 350°F and line a muffin tin with paper liners or lightly grease.
  2. Prepare muffin batter: In a large bowl, whisk together dry ingredients. In a separate bowl, whisk together wet ingredients. Combine wet and dry ingredients, then divide batter into muffin cups.
  3. Make streusel topping: Mix streusel ingredients in a bowl and sprinkle over muffin batter.
  4. Bake: Bake for 18–22 minutes or until a toothpick inserted into the center comes out clean.
  5. Cool and serve: Allow muffins to cool in the pan for 5 minutes before transferring to a wire rack.
