Muffins:
- 1 1/2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/4 cup light brown sugar (packed)
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/2 cup plain Greek yogurt
- 1/3 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/4 cup milk (any kind)
Streusel Topping:
- 1/3 cup light brown sugar
- 1/3 cup all-purpose flour
- 1/2 teaspoon ground cinnamon
- 2 tablespoons cold unsalted butter (cut into small cubes)
Instructions
- Preheat oven and prepare muffin tin: Preheat oven to 350°F and line a muffin tin with paper liners or lightly grease.
- Prepare muffin batter: In a large bowl, whisk together dry ingredients. In a separate bowl, whisk together wet ingredients. Combine wet and dry ingredients, then divide batter into muffin cups.
- Make streusel topping: Mix streusel ingredients in a bowl and sprinkle over muffin batter.
- Bake: Bake for 18–22 minutes or until a toothpick inserted into the center comes out clean.
- Cool and serve: Allow muffins to cool in the pan for 5 minutes before transferring to a wire rack.
Notes
- You can use vanilla Greek yogurt for extra flavor.
- Muffins freeze well—wrap individually and store in a freezer-safe bag for up to 2 months.
