Description

Cookies:

  • 1 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 large egg
  • 1 tablespoon instant coffee granules, dissolved in 1 tablespoon hot water
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 cup heavy cream

Filling:

  • 1/2 cup chocolate hazelnut spread (such as Nutella)

Instructions

  1. Preheat oven and prepare baking sheet: Preheat oven to 350°F and line a baking sheet with parchment paper.
  2. Mix wet ingredients: In a large bowl, cream together butter, granulated sugar, and brown sugar. Add the egg, dissolved coffee, vanilla extract, and heavy cream; mix well.
  3. Combine dry ingredients: In a separate bowl, whisk together flour, baking soda, and salt.
  4. Form cookie dough: Gradually add dry ingredients to wet mixture, forming a soft dough. Roll dough into balls, flatten slightly, and place on baking sheet.
  5. Bake: Bake for 10-12 minutes until edges are golden. Cool on sheet, then transfer to wire rack to cool completely.
  6. Assemble cookies: Spread chocolate hazelnut spread on the bottom of a cookie, then sandwich with another cookie. Repeat with remaining cookies.
