Cookies:
- 1 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 1/2 cup brown sugar
- 1 large egg
- 1 tablespoon instant coffee granules, dissolved in 1 tablespoon hot water
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/4 cup heavy cream
Filling:
- 1/2 cup chocolate hazelnut spread (such as Nutella)
Instructions
- Preheat oven and prepare baking sheet: Preheat oven to 350°F and line a baking sheet with parchment paper.
- Mix wet ingredients: In a large bowl, cream together butter, granulated sugar, and brown sugar. Add the egg, dissolved coffee, vanilla extract, and heavy cream; mix well.
- Combine dry ingredients: In a separate bowl, whisk together flour, baking soda, and salt.
- Form cookie dough: Gradually add dry ingredients to wet mixture, forming a soft dough. Roll dough into balls, flatten slightly, and place on baking sheet.
- Bake: Bake for 10-12 minutes until edges are golden. Cool on sheet, then transfer to wire rack to cool completely.
- Assemble cookies: Spread chocolate hazelnut spread on the bottom of a cookie, then sandwich with another cookie. Repeat with remaining cookies.

- For a stronger coffee flavor, add an extra 1/2 tablespoon of instant coffee.
