Coconut Broth:
- 1 can (14 oz) coconut milk

- 1 tablespoon brown sugar
- 1 cup cherry tomatoes halved
- 1 cup baby spinach or kale

Instructions
- Heat olive oil: In a large pot over medium heat, sauté onion until soft, about 3 minutes.
