Instructions
- Preheat the oven: Preheat the oven to 350°F and line a baking sheet with parchment paper.
- Mix dry ingredients: In a medium bowl, whisk together the coconut flour, baking soda, and salt.
- Combine wet ingredients: In another bowl, mix the melted coconut oil, honey or maple syrup, vanilla extract, and eggs until smooth.
- Form dough: Combine the wet and dry ingredients, stirring until a thick dough forms. Fold in the shredded coconut if desired.
- Bake: Scoop tablespoon-sized portions of dough onto the prepared baking sheet, flatten slightly, and bake for 10 to 12 minutes until lightly golden.
- Cool: Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
- Coconut flour dough will be thicker due to its high moisture absorption.
