For the Cake:
- 3/4 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/4 teaspoon ground cloves
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 3 large eggs
- 1 cup granulated sugar
- 2/3 cup canned pumpkin puree
For the Filling:
- 1 (8-ounce) package cream cheese (softened)
- 1 cup powdered sugar (sifted)
- 6 tablespoons unsalted butter (softened)
- 1 teaspoon vanilla extract
For Dusting:
- 1/4 cup powdered sugar (for dusting towel and topping)
Instructions
- Preheat oven to 375°F (190°C). Line a 15×10-inch jelly roll pan with parchment paper and lightly grease.
- In a medium bowl, whisk together flour, baking powder, baking soda, salt, cloves, cinnamon, and nutmeg.
- In a large bowl, beat eggs and granulated sugar until thick and pale. Mix in pumpkin puree. Stir in the flour mixture just until combined.
- Spread batter evenly in the prepared pan. Bake for 13–15 minutes or until the cake springs back when lightly touched.
- While baking, lay out a clean kitchen towel and generously dust with powdered sugar.
- Immediately after baking, carefully invert the hot cake onto the towel and peel off the parchment paper.
- Starting at the short end, roll the cake and towel together into a log. Let cool completely.
- For the filling, beat cream cheese, powdered sugar, butter, and vanilla until smooth.
- Carefully unroll the cooled cake and spread the filling evenly over the surface. Reroll the cake, then wrap in plastic wrap and refrigerate at least 1 hour before serving.
- Dust with powdered sugar just before slicing.
Notes
- Cake can be made up to 2 days ahead and stored in the refrigerator.
- For a cleaner cut, wipe the knife between slices.
