For the lemon filling:

  • 1 cup granulated sugar
  • 2 tablespoons all-purpose flour
  • 3 tablespoons cornstarch
  • 1/4 teaspoon salt
  • 1 1/2 cups water
  • 2 lemons (zested and juiced)
  • 2 tablespoons unsalted butter
  • 4 large egg yolks (beaten)

For the meringue:

  • 4 large egg whites
  • 1/4 teaspoon cream of tartar
  • 6 tablespoons granulated sugar

Instructions

  1. Preheat the oven: Preheat the oven to 375°F (190°C).
  2. Make the crust: Mix flour and salt, cut in butter, add ice water, shape into a disk, chill, roll out, press into a pie dish, prick with a fork, bake until golden, and set aside to cool.
  3. Prepare the lemon filling: Whisk together sugar, flour, cornstarch, and salt in a saucepan. Stir in water, lemon juice, and zest. Cook until thickened, reduce heat, stir in butter. Temper egg yolks and cook for 2 more minutes. Pour into the crust.
  4. Make the meringue: Beat egg whites and cream of tartar until soft peaks form. Gradually add sugar and beat until stiff peaks form. Spread meringue over hot filling.
  5. Bake the pie: Bake at 350°F (175°C) for 15–20 minutes or until meringue is golden. Cool, then chill before serving.
