Ingredients

Dry Noodles:

5.2 oz dry noodles of choice;

Cilantro Mixture:

½ cup chopped fresh cilantro, 3 cloves garlic (minced), ½ small shallot or red onion (minced), 1 tbsp sugar, 1 tsp curry powder, ½ tbsp chili powder (optional);

Sauce:

¼ cup oil (e.g., olive oil), 1.5–2 tbsp vegetarian mushroom oyster sauce, 1 tbsp dark soy sauce, 2 tbsp lime juice (juice from 1 lime)


Instructions

  1. Cook the Noodles: Cook the noodles until very chewy, rinse under cold water, and set aside.
  2. Prepare the Cilantro Mixture: In a heat-proof bowl, combine cilantro, garlic, shallot or red onion, sugar, curry powder, and chili powder. Heat the oil until it just bubbles, then pour it over the bowl ingredients and enjoy the sizzle. Stir to combine.
  3. Make the Sauce: Add the oyster sauce, soy sauce, and lime juice, mixing well. Add the noodles and toss to coat evenly.
