Chicken Marinade:
- 1 1/2 lbs boneless skinless chicken thighs or breasts
- 1/4 cup fresh lime juice (about 2 limes)
- 2 tablespoons lime zest
- 1/4 cup chopped fresh cilantro
- 3 tablespoons olive oil
- 3 cloves garlic (minced)
- 1 teaspoon honey
- 1 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Prepare Marinade: In a medium bowl, whisk together lime juice, lime zest, cilantro, olive oil, garlic, honey, cumin, smoked paprika, salt, and pepper until well combined.
- Marinate Chicken: Place chicken in a large resealable plastic bag or shallow dish and pour the marinade over it. Seal or cover and refrigerate for at least 30 minutes, preferably 2–4 hours.
- Cook Chicken: Preheat grill or skillet to medium-high heat. Remove chicken from marinade and cook for 5–6 minutes per side, or until nicely charred and cooked through.
- Rest and Serve: Let chicken rest for a few minutes before serving. Garnish with extra cilantro and lime wedges if desired.
