For the crust:

  • 1 1/2 cups chocolate cookie crumbs
  • 1/3 cup melted butter
  • 2 tbsp granulated sugar

For the filling:

  • 24 oz cream cheese, softened
  • 3/4 cup granulated sugar
  • 3 large eggs
  • 1 cup sour cream
  • 1 tsp vanilla extract
  • 4 oz semi-sweet chocolate, melted and slightly cooled

For the strawberry swirl:

  • 1 cup fresh strawberries
  • 2 tbsp sugar
  • 1 tsp lemon juice

Instructions

  1. Preheat the oven to 325°F (160°C) and grease a 9-inch springform pan.
  2. In a bowl, combine chocolate cookie crumbs, melted butter, and granulated sugar until well mixed. Press firmly into the bottom of the pan to form the crust.

  3. In a small saucepan, cook strawberries, sugar, and lemon juice over medium heat until the berries soften and the sauce thickens slightly. Blend and strain to remove seeds, then set aside.
  4. In a mixing bowl, beat cream cheese and granulated sugar until smooth. Add eggs one at a time, mixing just until combined. Stir in sour cream and vanilla extract.
  5. Divide the batter in half and mix the melted chocolate into one half. Pour half of the plain cheesecake batter onto the crust, then add spoonfuls of the chocolate and strawberry mixtures, alternating and swirling gently with a knife. Repeat with remaining batter and sauces.
  6. Bake for 55–65 minutes until the center is set but slightly jiggly. Turn off the oven, crack the door, and allow the cheesecake to cool inside for 1 hour. Chill for at least 4 hours or overnight before serving.

Notes

  • For extra flavor, drizzle with melted chocolate and top with fresh strawberries before serving.
  • To prevent cracks, use a water bath or place a pan of hot water on the oven rack below the cheesecake.
