For the stuffed mushrooms:
- 20 large white mushrooms, stems removed and finely chopped
- 1 tablespoon olive oil
- ½ lb cooked chicken breast, finely chopped
- 2 cloves garlic, minced
- ¼ cup onion, finely diced
- ½ teaspoon Italian seasoning
- ¼ teaspoon salt
- ¼ teaspoon black pepper
- 4 oz cream cheese, softened
- ¼ cup grated Parmesan cheese
- ¼ cup shredded mozzarella cheese
- 2 tablespoons chopped fresh parsley
Instructions
- Preheat oven to 375°F and line a baking sheet with parchment paper.
- Clean mushroom caps and set aside. In a skillet, sauté chopped mushroom stems, onion, and garlic until softened.
- Add chopped chicken, Italian seasoning, salt, and pepper. Cook briefly, then remove from heat.
- Stir in cream cheese, Parmesan, and half the mozzarella until creamy. Fill mushroom caps with mixture.
- Sprinkle remaining mozzarella over the tops. Bake for 18–20 minutes until tender.
- Garnish with parsley and serve warm.
