- 1 cup shredded reduced-fat cheddar or Mexican blend cheese
- 1 pound mini bell peppers (halved and deseeded)
- 1/2 cup black beans (drained and rinsed)
- 1/4 cup sliced black olives
- 1/4 cup diced red onion
- 1/4 cup diced tomatoes
- 1 avocado (diced)
- 1/4 cup chopped fresh cilantro
- Optional toppings: Greek yogurt or light sour cream, jalapeño slices, salsa
Instructions
- Preheat oven: Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Prepare Chicken: In a bowl, mix the shredded chicken with cumin, chili powder, garlic powder, salt, pepper, and lime juice.
- Assemble Nachos: Arrange the halved mini bell peppers cut-side up on the baking sheet. Fill each pepper with a spoonful of the seasoned chicken. Top with black beans and sprinkle with shredded cheese.
- Bake: Bake for 8 to 10 minutes, or until the cheese is melted and bubbly.
- Top and Serve: Remove from the oven and top with olives, onions, tomatoes, avocado, and cilantro. Add desired toppings like Greek yogurt or salsa. Serve immediately.
