Meatloaf:
- 1 1/2 pounds ground chicken
- 1/2 cup breadcrumbs
- 1/4 cup milk
- 1 large egg
- 2 teaspoons Dijon mustard
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup diced cooked ham
- 1 cup shredded Swiss or Gruyère cheese
Dijon Gravy:
- 2 tablespoons unsalted butter
- 2 tablespoons all-purpose flour
- 1 cup chicken broth
- 1/2 cup milk or cream
- 1 tablespoon Dijon mustard
- Salt and pepper to taste
Instructions
- Preheat oven: Preheat oven to 375°F (190°C).
- Prepare meatloaf: In a large bowl, mix ground chicken, breadcrumbs, milk, egg, Dijon mustard, garlic powder, onion powder, salt, and pepper. Add diced ham and shredded cheese. Shape into a loaf and bake for 45–50 minutes.
- Make Dijon gravy: Melt butter, whisk in flour, then slowly add chicken broth and milk. Stir in Dijon mustard, simmer until thickened. Season with salt and pepper.
- Serve: Rest meatloaf before slicing and serve with warm Dijon gravy.
