Instructions

  1. Heat olive oil: In a large pot over medium heat, add the diced onion, carrots, and celery. Sauté for 5–6 minutes until vegetables are softened.
  2. Add seasonings: Stir in garlic, thyme, and parsley. Cook for an additional minute.
  3. Simmer: Pour in the chicken broth, bring to a boil, then add the rice. Reduce heat, cover, and simmer for 18–20 minutes until rice is tender.
  4. Finish the soup: Stir in the shredded chicken and simmer for 5 more minutes. Season with salt, pepper, and lemon juice if desired.
