For the Chocolate Chip Cookie Layer:
- 1/2 cup unsalted butter (softened)
- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 1/4 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup semi-sweet chocolate chips
Instructions
- Make the Brownie Layer: In a medium bowl, mix melted butter and granulated sugar until combined. Whisk in eggs and vanilla. Stir in cocoa powder, flour, salt, and baking powder until a thick batter forms. Spread evenly into the prepared pan.
- Make the Cookie Layer: In another bowl, beat softened butter with brown and granulated sugar until light and fluffy. Mix in the egg and vanilla. Stir in flour, baking soda, and salt until just combined. Fold in chocolate chips. Drop spoonfuls of cookie dough over the brownie batter and gently spread or press to cover.
- Bake for 30–35 minutes or until the top is golden and a toothpick inserted into the center comes out with just a few moist crumbs. Cool completely in the pan before slicing.
Notes
- For extra richness, add chunks of dark chocolate to the brownie layer.
- Chill the brookies for 20 minutes before slicing for cleaner edges.
