Cherries:
- 1 1/2 cups fresh or frozen pitted cherries, halved
- 1/4 cup flour (for cherry toss)
- 1 tablespoon granulated sugar (for topping)
- Optional: coarse sugar for sprinkling
Instructions
- Preheat the oven: Preheat the oven to 375°F (190°C) and prepare a muffin tin with liners or grease.
- Mix dry ingredients: Combine flour, sugars, baking powder, cinnamon, and salt in a bowl.
- Combine wet ingredients: Whisk melted butter, milk, egg, and vanilla until smooth.
- Mix wet and dry: Add wet ingredients to dry and stir until just combined.
- Add cherries: Toss halved cherries in flour, then fold into batter.
- Fill muffin cups: Divide batter into 12 cups, top with sugar, and bake for 18–22 minutes.
- Cool and enjoy: Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
Notes
- You can use frozen cherries, but thaw and drain them first.
- Enhance with streusel topping or vanilla glaze for added flavor.
