Instructions
- Preheat Oven: Preheat oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
- Mix Dry Ingredients: In a large mixing bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
- Combine Wet Ingredients: In a separate bowl, whisk together milk, oil, eggs, vanilla extract, and almond extract.
- Combine Wet and Dry: Add the wet ingredients to the dry ingredients and stir until just combined.
- Add Mix-ins: Fold in the cherries and nuts if using.
- Bake: Pour the batter into the prepared loaf pan and bake for 55–65 minutes, or until a toothpick inserted in the center comes out clean.
- Cool and Serve: Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Notes
- For a sweeter loaf, drizzle with a simple glaze made from powdered sugar and maraschino cherry juice once cooled.
- Be sure to dry the cherries well to prevent excess moisture in the bread.
