Description

This Cheesy Chicken Dorito Casserole recipe is a comforting Tex-Mex dish that combines shredded chicken with a creamy sauce, topped with crunchy Doritos and melted cheddar cheese.

Ingredients:

  • 3 cups cooked chicken (shredded)
  • 1 (10.5 oz) can cream of chicken soup
  • 1/2 cup sour cream
  • 1/2 cup milk
  • 1 (10 oz) can diced tomatoes with green chilies (drained)
  • 1 1/2 cups shredded cheddar cheese (divided)
  • 1 teaspoon taco seasoning
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1 (9.75 oz) bag nacho cheese Doritos (crushed slightly)
  • Chopped cilantro or green onions for garnish (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish. In a large bowl, mix together cream of chicken soup, sour cream, milk, drained tomatoes with green chilies, 1 cup cheddar cheese, taco seasoning, garlic powder, and onion powder.
  2. Stir in the shredded chicken until evenly coated. Spread half of the crushed Doritos in the bottom of the prepared baking dish.
  3. Spoon the chicken mixture over the Doritos and spread evenly. Top with remaining Doritos and sprinkle with the rest of the cheddar cheese.
  4. Bake uncovered for 25–30 minutes, until bubbly and golden. Garnish with chopped cilantro or green onions if desired.

Notes

  • For a spicier kick, use spicy Doritos or add chopped jalapeños.
  • This casserole is great for using up rotisserie chicken and can be made ahead and reheated.
