Description

This Cheesy Asparagus Casserole is a creamy and indulgent side dish that’s perfect for any occasion. Tender asparagus is smothered in a rich cheese sauce, topped with buttery crackers, and baked to golden perfection.

Ingredients

Scale

Asparagus:

  • 1 ½ pounds fresh asparagus (trimmed and cut into 2-inch pieces)

Cheese Sauce:

  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 1 cup whole milk
  • ½ cup sour cream
  • 1 cup shredded sharp cheddar cheese
  • ¼ cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Topping:

  • ½ cup crushed buttery crackers (like Ritz)
  • 1 tablespoon melted butter

Instructions

  1. Preheat the oven: Preheat the oven to 375°F (190°C) and grease a 9×9-inch baking dish.
  2. Prepare asparagus: Steam or blanch asparagus until tender. Drain and set aside.
  3. Make cheese sauce: Melt butter, whisk in flour, then gradually add milk. Cook until thickened. Remove from heat and stir in sour cream, cheeses, garlic powder, onion powder, salt, and pepper.
  4. Combine ingredients: Add asparagus to cheese sauce, toss to coat, and pour into baking dish.
  5. Add topping: Mix crushed crackers with melted butter, sprinkle over casserole.
  6. Bake: Bake for 20–25 minutes until bubbly and golden brown. Let cool slightly before serving.

Notes

  • You can substitute Greek yogurt for the sour cream or use Gruyère for a more upscale flavor.
  • Add cooked bacon bits or caramelized onions for extra richness.
  • If using frozen asparagus, thaw and drain well before adding.
