Instructions

  1. Preheat oven and prepare baking sheets: Preheat oven to 350°F and line two baking sheets with parchment paper.
  2. Make cookie dough: In a bowl, whisk together flour, baking soda, cinnamon, and salt. In a large mixing bowl, beat butter, brown sugar, and granulated sugar until creamy. Add eggs one at a time, then mix in vanilla. Gradually add dry ingredients until just combined. Fold in apples and caramel bits.
  3. Prepare cheesecake filling: In a separate small bowl, beat cream cheese with powdered sugar and vanilla until smooth.
  4. Assemble cookies: Scoop 1 1/2 tablespoons of cookie dough onto prepared sheets. Make a small indentation and place 1 teaspoon of cream cheese filling inside. Cover with another tablespoon of dough and seal edges. Repeat with remaining dough.
