Instructions
- Cheesecake Filling: In a medium bowl, beat the softened cream cheese until smooth. Add powdered sugar, vanilla extract, and Greek yogurt (or sour cream), and beat again until light and creamy.
- Fruit Mixture: Gently fold in the diced strawberries, blueberries, pineapple, and kiwi until evenly distributed.
- Assembly: Lay a tortilla flat on a clean surface and spread a generous layer of the cheesecake fruit mixture evenly across it, leaving a small border around the edges. Roll the tortilla tightly into a log, then slice into 1 to 1½ inch pinwheels.
- Serving: Repeat with remaining tortillas and filling. Arrange roll ups on a platter and chill for 15–30 minutes before serving. Dust with powdered sugar just before serving if desired.
