Ingredients
Scale
Beef Filling
- 1 pound ground beef
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/4 cup ketchup
- 1 tablespoon yellow mustard
- 1 tablespoon finely chopped pickles
- 1 cup shredded cheddar cheese
Dough & Topping
- 1 (16 oz) can refrigerated biscuit dough (8 large biscuits)
- 1 egg, beaten (for egg wash)
- Sesame seeds for topping (optional)
Instructions
- Preheat Oven and Prepare Baking Sheet: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper to prevent sticking and ensure even baking.
- Cook the Ground Beef: In a skillet over medium heat, cook the ground beef along with salt, black pepper, and garlic powder until the meat is browned and fully cooked through. Drain any excess fat to keep the filling from becoming greasy.
- Combine with Condiments: Stir the ketchup, yellow mustard, and finely chopped pickles into the cooked beef mixture. Remove the skillet from heat and allow the mixture to cool slightly.
- Add Cheese: Once the beef mixture has cooled a little, stir in the shredded cheddar cheese to evenly distribute it throughout the filling.
- Prepare the Biscuit Dough: Flatten each biscuit dough piece into a 5-6 inch round using your hands or a rolling pin to create a base for your filling.
- Fill and Seal Pockets: Spoon approximately 2-3 tablespoons of the cheeseburger filling into the center of each dough round. Fold the dough over to form a half-moon shape and pinch the edges tightly to seal the pocket. Use a fork to crimp the edges for a secure closure and decorative finish.
- Apply Egg Wash and Optional Topping: Brush the tops of each pocket with the beaten egg to give a shiny, golden crust when baked. If desired, sprinkle sesame seeds over the top for added texture and flavor.
- Bake: Place the cheeseburger pockets on the prepared baking sheet and bake for 15–18 minutes or until they are golden brown and puffed up.
- Cool and Serve: Allow the pockets to cool slightly on a wire rack before serving to ensure the filling isn’t too hot and to preserve the pockets’ structure.
Notes
- You can add cooked bacon bits into the beef mixture for extra smoky flavor.
- Substitute ground turkey for a lighter, leaner protein option.
- These pockets freeze well; just reheat them in the oven for a quick snack or meal later.
