For the Crust:
- 1 ½ cups graham cracker crumbs
- ¼ cup granulated sugar
- ½ cup unsalted butter, melted
For the Cheesecake Filling:
- 16 oz cream cheese, softened
- ½ cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- ¼ cup sour cream
- ½ cup caramel sauce, plus more for drizzling
- Optional pinch of sea salt for topping
Instructions
- Preheat and Prepare: Preheat the oven to 325°F (160°C) and line an 8×8-inch baking pan with parchment paper, leaving an overhang for easy removal.
- Make the Crust: Combine graham cracker crumbs, ¼ cup sugar, and melted butter. Press into the pan and bake.
- Prepare the Filling: Beat cream cheese until smooth, add sugar, eggs, vanilla, and sour cream. Pour over the crust.
- Add Caramel: Drizzle caramel sauce over the filling and swirl with a knife.
- Bake: Bake for 35–40 minutes until set. Cool, then refrigerate for at least 3 hours.
- Serve: Slice into bars, drizzle with more caramel and a pinch of sea salt if desired.
Notes
- Use store-bought or homemade caramel sauce.
- For clean slices, wipe the knife between cuts.
- Bars can be made a day ahead and stored in the fridge.
