Instructions
- Preheat the oven: Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream butter and sugars: In a large bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy.
- Add egg and vanilla: Beat in the egg and vanilla until well combined.
- Mix dry ingredients: In a separate bowl, whisk together the flour, baking soda, salt, cinnamon, and nutmeg.
- Combine wet and dry: Gradually mix the dry ingredients into the wet mixture until fully combined.
- Add apple and caramel: Gently fold in the chopped apples and caramel bits.
- Bake: Scoop tablespoon-sized amounts of dough onto the prepared baking sheet and bake for 10–12 minutes until golden.
- Cool: Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

- Use firm apples for best texture and blot them dry before adding to the dough.
- For a drizzle effect, melt additional soft caramels and drizzle over cooled cookies.
