For the Deviled Eggs:

  • 12 large eggs
  • 1/2 pound small shrimp (peeled, deveined, cooked, and chopped)
  • 1/3 cup mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 teaspoon lemon juice
  • 1 teaspoon Cajun seasoning (plus more for garnish)
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1 tablespoon chopped fresh parsley or chives (optional for garnish)

Instructions

  1. Cook the Eggs: Place eggs in a large saucepan, cover with cold water, bring to a boil, then let sit for 12 minutes. Peel, slice in half, and remove yolks.
  2. Make the Filling: Mash yolks with mayonnaise, mustard, lemon juice, Cajun seasoning, garlic powder, paprika, salt, and pepper. Fold in chopped shrimp.
