For the Deviled Eggs:
- 12 large eggs
- 1/2 pound small shrimp (peeled, deveined, cooked, and chopped)
- 1/3 cup mayonnaise
- 1 teaspoon Dijon mustard
- 1 teaspoon lemon juice
- 1 teaspoon Cajun seasoning (plus more for garnish)
- 1/4 teaspoon garlic powder
- 1/4 teaspoon smoked paprika
- Salt and pepper to taste
- 1 tablespoon chopped fresh parsley or chives (optional for garnish)
Instructions
- Cook the Eggs: Place eggs in a large saucepan, cover with cold water, bring to a boil, then let sit for 12 minutes. Peel, slice in half, and remove yolks.
- Make the Filling: Mash yolks with mayonnaise, mustard, lemon juice, Cajun seasoning, garlic powder, paprika, salt, and pepper. Fold in chopped shrimp.
- Fill the Eggs: Spoon or pipe filling into egg whites. Garnish with Cajun seasoning and herbs. Chill before serving.
