  • 1 pound lean ground beef
  • 1 small onion, chopped

Soup Base:

  • 4 cups beef broth
  • 1 can (14.5 oz) diced tomatoes with juice
  • 1 can (15 oz) tomato sauce
  • 1 cup frozen mixed vegetables
  • 1 cup elbow macaroni or small pasta
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  1. Brown Ground Beef: In a large pot over medium heat, brown the ground beef until fully cooked, breaking it apart as it cooks. Drain excess fat if needed.
  2. Sauté Onion and Garlic: Add the chopped onion and garlic to the pot and sauté for 2–3 minutes until softened.
  3. Add Remaining Ingredients: Stir in the beef broth, diced tomatoes, tomato sauce, Italian seasoning, salt, and pepper. Bring to a boil.
  4. Cook Soup: Add the frozen vegetables and uncooked pasta to the pot. Reduce heat to a simmer and cook for 10–12 minutes, or until the pasta is tender. Stir occasionally to prevent sticking.
  5. Adjust Seasoning and Serve: Taste the soup and adjust seasoning if needed. Serve hot.
