Description

These Buffalo Chicken Meatballs are a spicy twist on a classic favorite, perfect for game day or as a flavorful appetizer. Made with ground chicken, aromatic vegetables, and a tangy buffalo sauce, these meatballs are baked to perfection and served with a side of cooling dressing.

Ingredients

Scale

Main Meatball Ingredients:

  • 1 pound ground chicken
  • 1/2 cup breadcrumbs
  • 1/4 cup finely chopped celery
  • 1/4 cup finely chopped green onions
  • 1 large egg
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Additional Ingredients:

  • 2 tablespoons butter
  • 1/2 cup buffalo wing sauce (like Frank’s RedHot)
  • Optional: ranch or blue cheese dressing for dipping
  • Extra green onions for garnish

Instructions

  1. Preheat the oven: Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Mix the meatball ingredients: In a large bowl, combine ground chicken, breadcrumbs, celery, green onions, egg, garlic powder, onion powder, salt, and pepper. Mix until just combined.
  3. Form the meatballs: Roll the mixture into 1 1/2-inch balls and place them on the prepared baking sheet.
  4. Bake: Bake for 18–20 minutes or until the meatballs are cooked through and golden.
  5. Prepare the sauce: While the meatballs bake, melt the butter in a small saucepan over low heat. Stir in the buffalo sauce until well combined.
  6. Coat the meatballs: Once the meatballs are done, toss them in the buffalo sauce until fully coated.
  7. Serve: Serve the meatballs warm with ranch or blue cheese dressing and garnish with chopped green onions if desired.

Notes

  • These meatballs make a great appetizer or can be served over rice or in a sub roll for a meal.
  • You can use ground turkey as a substitute for chicken.
  • For extra spice, add a pinch of cayenne to the sauce.
