For the Chicken Bites:
- 1 pound boneless skinless chicken breasts, cut into 1-inch pieces
- 1/2 cup all-purpose flour
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 2 large eggs, beaten
- 1 cup breadcrumbs or panko
- Oil for frying
For the Buffalo Sauce:
- 1/2 cup buffalo wing sauce
- 2 tablespoons unsalted butter
For Serving:
- Ranch or blue cheese dressing
Instructions
- Prepare the Chicken: In a shallow dish, mix flour, salt, pepper, and garlic powder. Dip chicken pieces into the flour mixture, then into beaten eggs, and finally coat with breadcrumbs.
- Fry the Chicken: Heat oil in a deep skillet or fryer to 350°F. Fry chicken bites in batches for 4–5 minutes until golden and cooked through, draining on paper towels.
- Make the Buffalo Sauce: In a small saucepan over low heat, melt butter and stir into buffalo wing sauce. Toss the fried chicken bites in the buffalo sauce until evenly coated.
- Serve: Serve immediately with ranch or blue cheese dressing for dipping.
Notes
- You can bake these at 400°F for 20–22 minutes for a lighter version.
- For extra crunch, use panko breadcrumbs.
