- 1 cup shredded sharp cheddar cheese
- 1/2 cup grated Parmesan cheese
- 1/2 cup plain breadcrumbs

- 2 large eggs
- 2 cloves garlic, minced
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
For Coating:
- 1 cup panko breadcrumbs
- Oil for frying
Instructions
- Combine Ingredients: In a large bowl, mix together steamed broccoli, cheddar cheese, Parmesan cheese, plain breadcrumbs, green onions, eggs, garlic, salt, and black pepper until well combined.
- Form Balls: Scoop out 1 tablespoon of the mixture and roll into balls. Coat each ball in panko breadcrumbs.
- Chill: Refrigerate the coated balls for 20–30 minutes to firm up.
- Fry: Heat oil in a skillet, then fry the balls until golden brown and crisp, about 2–3 minutes per batch.
- Serve: Drain on paper towels and serve warm with your favorite dipping sauce.
Notes
- For a healthier option, bake at 400°F for 20–25 minutes or air fry at 375°F for 10–12 minutes.
- Frozen broccoli can be used if fresh is unavailable—just ensure it’s well-drained.
