For the cookies:

  • 2 ripe bananas (mashed)
  • 1½ cups old-fashioned rolled oats
  • ½ cup almond butter
  • ¼ cup honey or maple syrup
  • ¼ cup ground flaxseed
  • ½ teaspoon cinnamon
  • ½ teaspoon vanilla extract
  • ⅓ cup mini chocolate chips
  • ⅓ cup chopped walnuts or pecans
  • ¼ cup dried cranberries or raisins
  • ¼ teaspoon salt
  • optional 2 tablespoons chia seeds or hemp hearts

Instructions

  1. Preheat the oven: Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. Mix wet ingredients: In a large bowl, mash the bananas until smooth. Add the oats, almond butter, honey or maple syrup, ground flaxseed, cinnamon, vanilla, and salt. Stir until well combined.
  3. Add mix-ins: Fold in the chocolate chips, nuts, and dried fruit.
  4. Bake: Scoop the dough into 2-tablespoon portions on the baking sheet. Flatten slightly and bake for 12–15 minutes until golden.
  5. Cool: Allow to cool on the baking sheet before transferring to a wire rack.
