Dough:
- 2 cups shredded mozzarella cheese
- 2 ounces cream cheese
- 1 1/2 cups almond flour
- 1 tablespoon baking powder
- 1 large egg (for dough)
Topping:
- 1 large egg (for brushing)
- 1 tablespoon sesame seeds or everything bagel seasoning (optional)
Instructions
- Preheat the oven: Preheat the oven to 400°F and line a baking sheet with parchment paper.
- Melt the cheeses: In a microwave-safe bowl, combine the shredded mozzarella and cream cheese. Microwave in 30-second intervals, stirring in between, until melted and smooth.
- Mix the dough: In a separate bowl, mix the almond flour and baking powder. Add the dry ingredients and one egg to the melted cheese mixture. Stir well, then knead until a smooth dough forms.
- Shape the bagels: Divide the dough into 6 parts and shape each into a bagel. Place on the baking sheet.
- Brush and bake: Beat the second egg and brush it over the bagels. Sprinkle with sesame seeds or seasoning. Bake for 12–15 minutes until golden.
- Cool and serve: Let the bagels cool slightly before serving.
