Ingredients:

  • 14 ounces beef smoked sausage, sliced into 1/4-inch rounds
  • 1 tablespoon olive oil
  • 1 large yellow onion, thinly sliced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 2 cloves garlic, minced
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • 2 cups cooked white or brown rice

Instructions

  1. Cook the Sausage: In a large skillet over medium heat, add olive oil and sliced smoked sausage. Cook for 4–5 minutes until browned. Remove sausage and set aside.
  2. Sauté Vegetables: In the same skillet, cook onions and bell peppers for 6–8 minutes until softened. Add garlic, smoked paprika, oregano, black pepper, and red pepper flakes. Cook for another minute.
  3. Combine and Serve: Return sausage to the skillet, toss everything together, and cook for 2–3 minutes. Serve hot over cooked rice.
