- 14 ounces beef smoked sausage, sliced into 1/4-inch rounds
- 1 tablespoon olive oil
- 1 large yellow onion, thinly sliced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 2 cloves garlic, minced
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon dried oregano
- 1/4 teaspoon black pepper
- 1/4 teaspoon red pepper flakes (optional)
- 2 cups cooked white or brown rice
Instructions
- Cook the Sausage: In a large skillet over medium heat, add olive oil and sliced smoked sausage. Cook for 4–5 minutes until browned. Remove sausage and set aside.
- Sauté Vegetables: In the same skillet, cook onions and bell peppers for 6–8 minutes until softened. Add garlic, smoked paprika, oregano, black pepper, and red pepper flakes. Cook for another minute.
- Combine and Serve: Return sausage to the skillet, toss everything together, and cook for 2–3 minutes. Serve hot over cooked rice.

- Enhance with lemon juice or parsley before serving
