For the Enchiladas:
- 1 (10 oz) can red enchilada sauce
- 1 (15 oz) can black beans (drained and rinsed)
- 1 cup frozen corn
- 8 small flour or corn tortillas (cut into 1-inch strips)
- 1 1/2 cups shredded cheddar or Mexican blend cheese
- Chopped fresh cilantro and sliced green onions for garnish
Instructions
- Cook the Beef Filling: In a large oven-safe skillet over medium heat, cook the ground beef and diced onion until browned. Add garlic, cumin, chili powder, paprika, salt, and pepper. Cook until fragrant.
- Prepare the Enchiladas: Stir in enchilada sauce, black beans, and corn. Add tortilla strips, mix to coat. Sprinkle cheese over the top.
- Finish Cooking: Cover and cook until cheese melts. Optionally, broil for a golden top. Garnish with cilantro and green onions.
Notes
- You can use leftover taco meat, shredded chicken, or rotisserie chicken instead of ground beef.
