Beef:
- 1 pound beef stew meat, cut into bite-sized pieces
- 1 tablespoon vegetable oil
Soup Base:
- 1 medium onion, diced
- 3 cloves garlic, minced
- 8 cups beef broth
- 2 medium carrots, sliced
- 2 celery stalks, sliced
- 1 bay leaf
- 1 teaspoon dried thyme
- 1 teaspoon dried parsley
- 1/2 teaspoon black pepper
- 1 teaspoon salt, or to taste
Additional:
- 8 ounces egg noodles
- 1 tablespoon soy sauce (optional)
- Chopped fresh parsley for garnish
Instructions
- Sear the Beef: Heat vegetable oil in a large pot, brown beef on all sides, then set aside.
- Saute Aromatics: Cook onion and garlic until softened.
- Cook the Soup: Return beef to the pot, add beef broth, carrots, celery, bay leaf, thyme, parsley, pepper, and salt. Simmer until beef is tender.
- Add Noodles: Stir in egg noodles and soy sauce, cook until noodles are tender.
- Finish and Serve: Adjust seasoning, remove bay leaf, garnish with parsley.

- For deeper flavor, brown the beef in batches to avoid steaming.
