Beef:

  • 1 pound beef stew meat, cut into bite-sized pieces
  • 1 tablespoon vegetable oil

Soup Base:

  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 8 cups beef broth
  • 2 medium carrots, sliced
  • 2 celery stalks, sliced
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • 1/2 teaspoon black pepper
  • 1 teaspoon salt, or to taste

Additional:

  • 8 ounces egg noodles
  • 1 tablespoon soy sauce (optional)
  • Chopped fresh parsley for garnish

Instructions

  1. Sear the Beef: Heat vegetable oil in a large pot, brown beef on all sides, then set aside.
  2. Saute Aromatics: Cook onion and garlic until softened.
  3. Cook the Soup: Return beef to the pot, add beef broth, carrots, celery, bay leaf, thyme, parsley, pepper, and salt. Simmer until beef is tender.
