Flatbreads:
- 2 naan or flatbread rounds
BBQ Chicken Toppings:
- 1 cup cooked chicken breast (shredded)
- 1/2 cup barbecue sauce
- 1 cup shredded mozzarella cheese
- 1/2 cup red onion (thinly sliced)
- 1/4 cup canned corn (drained)
- 1/4 cup chopped fresh cilantro
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven: Preheat the oven to 425°F (220°C).
- Prepare the flatbreads: Place the flatbreads on a baking sheet and brush lightly with olive oil.
- Prepare the BBQ chicken: In a small bowl, toss the shredded chicken with half of the barbecue sauce.
- Assemble the flatbreads: Spread the remaining sauce evenly over the flatbreads. Top each flatbread with mozzarella cheese, BBQ chicken, sliced red onion, and corn.
- Bake: Bake for 10–12 minutes, or until the cheese is melted and bubbly and the edges are golden brown.
- Finish and serve: Remove from oven, sprinkle with fresh cilantro, and season with salt and pepper to taste. Slice and serve immediately.
