Bang Bang Chicken Fried Rice Supreme is a flavorful and spicy twist on traditional fried rice. Tender chicken pieces are stir-fried with vegetables, eggs, and jasmine rice, then coated in a creamy and spicy sauce for a satisfying meal.

For the Chicken:
- 2 tablespoons vegetable oil
- 1 pound boneless skinless chicken thighs, cut into bite-sized pieces
- Salt and pepper to taste
For the Fried Rice:
- 3 cups cooked jasmine rice, preferably day-old
- 1 red bell pepper, diced
- 1 cup frozen peas and carrots, thawed
- 3 green onions, sliced
- 3 cloves garlic, minced
- 2 eggs, lightly beaten
For the Sauce:
- 1/4 cup mayonnaise
- 2 tablespoons Thai sweet chili sauce
- 1 tablespoon Sriracha
- 1 tablespoon soy sauce
- 1 teaspoon sesame oil
- 1 teaspoon rice vinegar
For Garnish:
- Chopped cilantro and sesame seeds (optional)
Instructions
- Cook the Chicken: Heat 1 tablespoon of vegetable oil in a large skillet or wok. Season chicken with salt and pepper, then cook until browned and cooked through. Set aside.
- Prepare the Fried Rice: Add remaining oil to the skillet. Sauté bell pepper, peas, carrots, and garlic. Push veggies aside, scramble eggs. Add rice and cooked chicken back to the skillet.
- Make the Sauce: Whisk together mayonnaise, chili sauce, Sriracha, soy sauce, sesame oil, and vinegar. Pour over the rice mixture.
- Finish and Garnish: Cook until heated through. Garnish with green onions, cilantro, and sesame seeds if desired.
Notes
- For a lighter version, use light mayonnaise and reduce sauce amount.
- Leftover rotisserie chicken can substitute chicken thighs.
- Top with chopped peanuts for extra crunch.
