Description

Bang Bang Chicken Fried Rice Supreme is a flavorful and spicy twist on traditional fried rice. Tender chicken pieces are stir-fried with vegetables, eggs, and jasmine rice, then coated in a creamy and spicy sauce for a satisfying meal.

For the Chicken:

  • 2 tablespoons vegetable oil
  • 1 pound boneless skinless chicken thighs, cut into bite-sized pieces
  • Salt and pepper to taste

For the Fried Rice:

  • 3 cups cooked jasmine rice, preferably day-old
  • 1 red bell pepper, diced
  • 1 cup frozen peas and carrots, thawed
  • 3 green onions, sliced
  • 3 cloves garlic, minced
  • 2 eggs, lightly beaten

For the Sauce:

  • 1/4 cup mayonnaise
  • 2 tablespoons Thai sweet chili sauce
  • 1 tablespoon Sriracha
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon rice vinegar

For Garnish:

  • Chopped cilantro and sesame seeds (optional)

Instructions

  1. Cook the Chicken: Heat 1 tablespoon of vegetable oil in a large skillet or wok. Season chicken with salt and pepper, then cook until browned and cooked through. Set aside.
  2. Prepare the Fried Rice: Add remaining oil to the skillet. Sauté bell pepper, peas, carrots, and garlic. Push veggies aside, scramble eggs. Add rice and cooked chicken back to the skillet.
  3. Make the Sauce: Whisk together mayonnaise, chili sauce, Sriracha, soy sauce, sesame oil, and vinegar. Pour over the rice mixture.
  4. Finish and Garnish: Cook until heated through. Garnish with green onions, cilantro, and sesame seeds if desired.

Notes

  • For a lighter version, use light mayonnaise and reduce sauce amount.
  • Leftover rotisserie chicken can substitute chicken thighs.
  • Top with chopped peanuts for extra crunch.
