For the Pancakes:
- 2 ripe bananas (mashed)
- 2 large eggs
- 1/2 cup milk (dairy or non-dairy)
- 1 teaspoon vanilla extract
- 1 cup rolled oats
- 1 teaspoon baking powder
- 1/2 teaspoon cinnamon

- butter or oil for cooking
Instructions
- In a blender, combine mashed bananas, eggs, milk, and vanilla extract. Add rolled oats, baking powder, cinnamon, and salt.
- Blend until smooth and let the batter rest for 5 minutes to thicken slightly.
- Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or oil.
- Pour 1/4 cup of batter per pancake onto the skillet. Cook for 2–3 minutes or until bubbles form on the surface and the edges look set, then flip and cook another 1–2 minutes until golden and cooked through.
- Repeat with the remaining batter.
- Serve warm with maple syrup, nut butter, or fresh fruit.
Notes
- For extra texture, stir in a few whole oats or chocolate chips before cooking.
- Use gluten-free oats for a gluten-free version.
- These pancakes can also be made ahead and reheated.
