- 1/2 cup unsalted butter (melted)
- 3/4 cup granulated sugar

- 1 teaspoon vanilla extract

- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon (optional)
Instructions
- Preheat oven and prepare muffin tin: Preheat oven to 350°F (175°C) and line a 12-cup muffin tin with paper liners or lightly grease.
- Mix wet ingredients: In a large bowl, combine mashed bananas and melted butter. Stir in the sugar, egg, and vanilla extract until well mixed.
- Combine dry ingredients: In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon (if using).
- Combine wet and dry ingredients: Add the dry ingredients to the banana mixture and stir just until combined—do not overmix.
- Bake: Divide the batter evenly among the muffin cups. Bake for 18–22 minutes, or until a toothpick inserted in the center comes out clean.
- Cool and serve: Let cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

- Add 1/2 cup chopped walnuts or chocolate chips for variation.
