Chicken:
- 4 boneless, skinless chicken breasts
BBQ Sauce:
- 1 cup BBQ sauce (hickory or smoky preferred)
Pineapple:
- 1 cup pineapple chunks (fresh or canned, drained)
- 1/2 cup pineapple juice (reserved if using canned)
Other:
- 1 tbsp olive oil
- 1 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp smoked paprika
- Salt and pepper to taste
- Chopped fresh cilantro or parsley for garnish (optional)
Instructions
- Preheat Oven: Preheat oven to 400°F (200°C). Grease a baking dish with olive oil.
- Season Chicken: Pat chicken breasts dry. Season both sides with garlic powder, onion powder, paprika, salt, and pepper. Place in baking dish.
- Prepare Sauce: Mix BBQ sauce and pineapple juice. Pour half over chicken. Add pineapple chunks.
- Bake: Bake uncovered for 25–30 minutes, spooning juices over halfway. Cook until internal temp reaches 165°F (74°C).
- Rest and Serve: Let chicken rest for 5 minutes. Brush with remaining sauce. Garnish with herbs.
