Chicken:

  • 4 boneless, skinless chicken breasts

BBQ Sauce:

  • 1 cup BBQ sauce (hickory or smoky preferred)

Pineapple:

  • 1 cup pineapple chunks (fresh or canned, drained)
  • 1/2 cup pineapple juice (reserved if using canned)

Other:

  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp smoked paprika
  • Salt and pepper to taste
  • Chopped fresh cilantro or parsley for garnish (optional)

Instructions

  1. Preheat Oven: Preheat oven to 400°F (200°C). Grease a baking dish with olive oil.
  2. Season Chicken: Pat chicken breasts dry. Season both sides with garlic powder, onion powder, paprika, salt, and pepper. Place in baking dish.
  3. Prepare Sauce: Mix BBQ sauce and pineapple juice. Pour half over chicken. Add pineapple chunks.
  4. Bake: Bake uncovered for 25–30 minutes, spooning juices over halfway. Cook until internal temp reaches 165°F (74°C).
  5. Rest and Serve: Let chicken rest for 5 minutes. Brush with remaining sauce. Garnish with herbs.
