Chicken Tenders:
- 1 1/2 pounds chicken tenders or boneless, skinless chicken breasts cut into strips
Breadcrumb Mixture:
- 1 cup panko breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper

- 2 large eggs

Instructions
- Preheat the oven: Preheat the oven to 425°F. Line a baking sheet with parchment paper and lightly coat with cooking spray.
- Prepare the coating: In a shallow bowl, whisk the eggs. In another bowl, combine panko breadcrumbs, Parmesan cheese, garlic powder, paprika, salt, and black pepper.
- Coat the chicken: Dip each chicken strip into the egg, then coat in the breadcrumb mixture, pressing gently to adhere.
- Bake the chicken: Place the breaded chicken on the prepared baking sheet. Lightly spray the tops with cooking spray to help them crisp. Bake for 18–20 minutes, flipping halfway through, until the chicken is golden brown and cooked through.
- Serve: Serve warm with your favorite dipping sauce.
Notes
- For extra crunch, toast the panko in a dry skillet for a few minutes before coating the chicken.
