For the Burritos:
- 2 cups cooked and shredded chicken breast
- 1 ripe avocado, diced
- 1 cup corn kernels (fresh, canned, or frozen and thawed)
- 1/2 cup black beans, rinsed and drained
- 1/4 cup diced red onion
- 1/4 cup chopped cilantro
- 1/2 cup shredded cheddar or Monterey Jack cheese
- juice of 1 lime
- salt and pepper to taste
- 4 large flour tortillas (burrito-size)
Instructions
- In a large bowl, combine shredded chicken, avocado, corn, black beans, red onion, cilantro, lime juice, salt, and pepper. Gently toss until well mixed. Lay tortillas flat and sprinkle a little cheese down the center of each. Spoon the chicken mixture evenly over the cheese.
- Fold in the sides of each tortilla and roll tightly into a burrito.
- Heat a large skillet over medium heat and place the burritos seam-side down. Cook for 2–3 minutes per side until golden and heated through. Slice and serve warm.
Notes
- For added flavor, spread a layer of sour cream or chipotle mayo inside the tortilla before adding the filling.
- These burritos can also be made ahead and reheated on a skillet or in foil.
