Description

Crust:

  • 2 refrigerated pie crusts (or homemade, rolled into rectangles)

Filling:

  • 6 cups peeled and thinly sliced apples (such as Honeycrisp or Granny Smith)
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 tablespoons all-purpose flour
  • 1 1/2 teaspoons ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 tablespoon lemon juice
  • 1 tablespoon butter (cut into small pieces)

Additional:

  • 1 egg (beaten, for egg wash)
  • Coarse sugar for sprinkling (optional)

Instructions

  1. Preheat the oven: Preheat the oven to 375°F (190°C) and lightly grease a 10×15-inch jelly roll pan or rimmed baking sheet.
  2. Prepare the crust: Roll out one pie crust to fit the bottom and sides of the pan, pressing into the corners and trimming any excess.
  3. Make the filling: In a large bowl, toss the sliced apples with granulated sugar, brown sugar, flour, cinnamon, nutmeg, and lemon juice until evenly coated. Pour the apple mixture into the crust-lined pan and spread evenly. Dot with small pieces of butter.
  4. Assemble the pie: Roll out the second crust and place it over the apples, trimming and sealing the edges with the bottom crust. Cut a few slits in the top to vent.
  5. Bake: Brush the top crust with beaten egg and sprinkle with coarse sugar if desired. Bake for 40–45 minutes, or until the crust is golden brown and the filling is bubbling.
  6. Cool and serve: Let cool for at least 30 minutes before slicing into squares.
