Crust:
- 2 refrigerated pie crusts (or homemade, rolled into rectangles)
Filling:
- 6 cups peeled and thinly sliced apples (such as Honeycrisp or Granny Smith)
- 3/4 cup granulated sugar
- 1/4 cup brown sugar
- 2 tablespoons all-purpose flour
- 1 1/2 teaspoons ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1 tablespoon lemon juice
- 1 tablespoon butter (cut into small pieces)
Additional:
- 1 egg (beaten, for egg wash)
- Coarse sugar for sprinkling (optional)
Instructions
- Preheat the oven: Preheat the oven to 375°F (190°C) and lightly grease a 10×15-inch jelly roll pan or rimmed baking sheet.
- Prepare the crust: Roll out one pie crust to fit the bottom and sides of the pan, pressing into the corners and trimming any excess.
- Make the filling: In a large bowl, toss the sliced apples with granulated sugar, brown sugar, flour, cinnamon, nutmeg, and lemon juice until evenly coated. Pour the apple mixture into the crust-lined pan and spread evenly. Dot with small pieces of butter.
- Assemble the pie: Roll out the second crust and place it over the apples, trimming and sealing the edges with the bottom crust. Cut a few slits in the top to vent.
- Bake: Brush the top crust with beaten egg and sprinkle with coarse sugar if desired. Bake for 40–45 minutes, or until the crust is golden brown and the filling is bubbling.
- Cool and serve: Let cool for at least 30 minutes before slicing into squares.
