Description

This classic Apple Pie recipe features a flaky homemade crust filled with a spiced cinnamon-apple mixture. Perfect for fall or any time of year!

For the crust:

  • 2 1/2 cups all-purpose flour
  • 1 cup unsalted butter (cold and cubed)
  • 1 teaspoon salt
  • 1 tablespoon sugar
  • 68 tablespoons ice water

For the filling:

  • 6 cups peeled and thinly sliced apples (Granny Smith or Honeycrisp)
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 tablespoon lemon juice
  • 2 tablespoons all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/8 teaspoon salt
  • 1 tablespoon butter (cut into small pieces)

Optional topping:

  • 1 egg (beaten with 1 tablespoon water for egg wash)
  • coarse sugar for sprinkling

Instructions

  1. Make the crust: Combine flour, sugar, and salt. Cut in butter, then add ice water gradually. Divide, shape into discs, and refrigerate.
  2. Prepare the filling: Toss apples with lemon juice. Add sugars, flour, cinnamon, nutmeg, and salt.
  3. Assemble the pie: Roll out dough, fit into pie dish, fill with apple mixture, top with second crust, and seal edges. Brush with egg wash, sprinkle sugar.
  4. Bake: Bake at 425°F for 45-50 minutes until golden and bubbly. Cool before serving.

Notes

  • The pie is best served slightly warm with vanilla ice cream.
  • You can freeze the unbaked assembled pie for up to 2 months; bake from frozen and add 15–20 minutes to the bake time.
