Main Cake:

  • 3 cups peeled and chopped apples (such as Granny Smith or Honeycrisp)
  • 2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 1/2 cup brown sugar (packed)
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped pecans or walnuts (optional)

For the Glaze:

  • 1/2 cup brown sugar
  • 1/4 cup unsalted butter
  • 2 tablespoons milk
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking pan.
  2. Mix dry ingredients: In a large bowl, whisk together flour, granulated sugar, brown sugar, baking soda, salt, cinnamon, and nutmeg.
  3. Combine wet ingredients: In a separate bowl, beat the eggs, oil, and vanilla extract until smooth. Add to the dry ingredients and stir to combine.
  4. Add apples and nuts: Fold in the chopped apples and nuts if using. Spread the batter in the pan.
  5. Bake: Bake for 45–50 minutes until a toothpick inserted into the center comes out clean.
  6. Make the glaze: In a saucepan, melt butter, add brown sugar and milk, bring to a boil, then remove from heat and stir in vanilla.
  7. Glaze the cake: Pour the warm glaze over the cake as soon as it’s out of the oven.
  8. Cool and serve: Let the cake cool slightly before serving.
