Instructions
- Preheat oven: Preheat oven to 375°F (190°C) and prepare muffin tin.
- Mix dry ingredients: In a large bowl, whisk together the dry ingredients.
- Combine wet ingredients: In a separate bowl, whisk eggs, oil, milk, and vanilla.
- Combine wet and dry ingredients: Pour wet ingredients into dry and stir until just moistened. Fold in apples.
- Fill muffin cups: Divide batter into muffin cups and sprinkle with cinnamon sugar topping.
- Bake: Bake for 18–22 minutes until a toothpick comes out clean.
- Cool and serve: Let cool in the pan for 5 minutes, then transfer to a wire rack.
