Chicken and Rice:
- 4 bone-in, skin-on chicken thighs
- 1 cup uncooked long-grain rice (such as basmati or jasmine)
- 1½ cups hot chicken stock
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 teaspoon dried Greek oregano
- Zest and juice of 1 lemon
- 2 tablespoons fresh parsley, chopped
- 2 tablespoons fresh dill, chopped
- ¼ cup olive oil
- ½ cup pitted olives
- Salt and pepper to taste
Additional:
- 1 cup plain Greek yogurt
Instructions
- Preheat the Air Fryer: Preheat the air fryer to 350°F (175°C) on the bake or roast setting.
- Prepare the Rice Mixture: In a large bowl, combine rice, hot chicken stock, onion, garlic, oregano, lemon zest and juice, parsley, dill, olive oil, and olives. Season with salt and pepper.
- Assemble the Dish: Transfer the rice mixture to an oven-safe baking dish. Place chicken thighs on top, season with salt and pepper, and place in the air fryer.
- Cook: Air fry for 40–50 minutes until chicken reaches 165°F (74°C) and rice is tender. In the last 5 minutes, add yogurt over the chicken and rice.
- Rest and Serve: Remove from the air fryer and let rest for 5 minutes before serving.
Notes
- If using boneless chicken, reduce cook time by 10–15 minutes.
- For a vegetarian version, use vegetable stock and substitute chicken with tofu or roasted vegetables.
- Serve with extra lemon wedges for added brightness.
