Bread:
- 1/3 cup light brown sugar (packed)
- 1 teaspoon ground cinnamon
- 2/3 cup granulated sugar
- 1/2 cup unsalted butter (softened)
- 2 large eggs
- 1 1/2 teaspoons vanilla extract
- 1 1/2 cups all-purpose flour
- 1 3/4 teaspoons baking powder
- 1/2 cup milk
- 1 1/2 cups peeled and chopped apples (such as Granny Smith or Honeycrisp)
Glaze:
- 1/2 cup powdered sugar
- 1–2 tablespoons milk or cream
- 1/4 teaspoon vanilla extract
Instructions
- Preheat oven: Preheat oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan or line it with parchment paper.
- Mix cinnamon sugar: In a small bowl, mix together the brown sugar and cinnamon and set aside.
- Cream butter and sugar: In a large mixing bowl, cream together the granulated sugar and butter until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla.
- Combine dry ingredients: In another bowl, whisk together the flour and baking powder. Add the dry ingredients to the butter mixture alternately with the milk, beginning and ending with the dry ingredients.
- Layer batter: Pour half the batter into the prepared pan. Top with half the chopped apples and sprinkle with half of the cinnamon-sugar mixture. Repeat the layers with the remaining batter, apples, and cinnamon-sugar. Lightly swirl with a knife.
- Bake: Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
- Make glaze: To make the glaze, whisk together powdered sugar, milk, and vanilla until smooth. Drizzle over the cooled bread before slicing.
