Bread:

  • 1/3 cup light brown sugar (packed)
  • 1 teaspoon ground cinnamon
  • 2/3 cup granulated sugar
  • 1/2 cup unsalted butter (softened)
  • 2 large eggs
  • 1 1/2 teaspoons vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 3/4 teaspoons baking powder
  • 1/2 cup milk
  • 1 1/2 cups peeled and chopped apples (such as Granny Smith or Honeycrisp)

Glaze:

  • 1/2 cup powdered sugar
  • 12 tablespoons milk or cream
  • 1/4 teaspoon vanilla extract

Instructions

  1. Preheat oven: Preheat oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan or line it with parchment paper.
  2. Mix cinnamon sugar: In a small bowl, mix together the brown sugar and cinnamon and set aside.
  3. Cream butter and sugar: In a large mixing bowl, cream together the granulated sugar and butter until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla.
  4. Combine dry ingredients: In another bowl, whisk together the flour and baking powder. Add the dry ingredients to the butter mixture alternately with the milk, beginning and ending with the dry ingredients.
  5. Layer batter: Pour half the batter into the prepared pan. Top with half the chopped apples and sprinkle with half of the cinnamon-sugar mixture. Repeat the layers with the remaining batter, apples, and cinnamon-sugar. Lightly swirl with a knife.
  6. Bake: Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  7. Make glaze: To make the glaze, whisk together powdered sugar, milk, and vanilla until smooth. Drizzle over the cooled bread before slicing.
