For the Bread:
- 1/3 cup brown sugar
- 1 teaspoon ground cinnamon
- 2/3 cup granulated sugar
- 1/2 cup unsalted butter (softened)
- 2 large eggs
- 1 1/2 teaspoons vanilla extract
- 1 1/2 cups all-purpose flour
- 1 3/4 teaspoons baking powder
- 1/2 cup milk
- 1 1/2 cups peeled and chopped apples (such as Granny Smith)
For the Glaze:
- 1/2 cup powdered sugar
- 1–2 tablespoons milk or cream
Instructions
- Preheat oven and prepare pan: Preheat oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
- Mix brown sugar and cinnamon: In a small bowl, mix brown sugar and cinnamon and set aside.
- Cream sugar and butter: In a large mixing bowl, cream together granulated sugar and butter until light and fluffy.
- Add eggs and vanilla: Add eggs one at a time, then mix in vanilla.
- Combine dry ingredients: In another bowl, whisk together flour and baking powder.
- Alternate adding dry ingredients and milk: Add dry ingredients to the creamed mixture alternately with milk, beginning and ending with the flour mixture. Stir until just combined.
- Layer batter, apples, and cinnamon sugar: Pour half the batter into the loaf pan, then layer with half the chopped apples and half the cinnamon-brown sugar mixture. Repeat with remaining batter, apples, and cinnamon mixture. Swirl the top layer with a knife.
- Bake: Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
- Cool and glaze: Let cool for 10 minutes in the pan, then transfer to a wire rack. For the glaze, mix powdered sugar with milk or cream until smooth and drizzle over cooled bread.
