  • 1/3 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 2/3 cup granulated sugar
  • 1/2 cup unsalted butter (softened)
  • 2 large eggs
  • 1 1/2 teaspoons vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 3/4 teaspoons baking powder
  • 1/2 cup milk
  • 1 1/2 cups peeled and chopped apples (such as Granny Smith)

For the Glaze:

  • 1/2 cup powdered sugar
  • 12 tablespoons milk or cream

Instructions

  1. Preheat oven and prepare pan: Preheat oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. Mix brown sugar and cinnamon: In a small bowl, mix brown sugar and cinnamon and set aside.
  3. Cream sugar and butter: In a large mixing bowl, cream together granulated sugar and butter until light and fluffy.
  4. Add eggs and vanilla: Add eggs one at a time, then mix in vanilla.
  5. Combine dry ingredients: In another bowl, whisk together flour and baking powder.
  6. Alternate adding dry ingredients and milk: Add dry ingredients to the creamed mixture alternately with milk, beginning and ending with the flour mixture. Stir until just combined.
  7. Layer batter, apples, and cinnamon sugar: Pour half the batter into the loaf pan, then layer with half the chopped apples and half the cinnamon-brown sugar mixture. Repeat with remaining batter, apples, and cinnamon mixture. Swirl the top layer with a knife.
  8. Bake: Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
  9. Cool and glaze: Let cool for 10 minutes in the pan, then transfer to a wire rack. For the glaze, mix powdered sugar with milk or cream until smooth and drizzle over cooled bread.
