  • 24 whole almonds (roasted)
  • 8 ounces semi-sweet or dark chocolate, chopped or in chips
  • 1 teaspoon coconut oil (optional, for smoother chocolate)

Instructions

  1. Prepare the Coconut Filling: In a medium bowl, combine shredded coconut, sweetened condensed milk, and vanilla extract. Mix well.
  2. Shape the Coconut Bites: Scoop about 1 tablespoon of the mixture and form small rectangles or balls. Press a roasted almond on top of each one.
  3. Chill the Bites: Place the coconut bites on a parchment-lined baking sheet and freeze for 20–30 minutes until firm.
  4. Melt the Chocolate: In a microwave-safe bowl, melt the chocolate and coconut oil in 30-second intervals until smooth.
  5. Dip the Bites: Dip each coconut bite into the melted chocolate, coating completely. Tap off excess chocolate and return to the baking sheet.
  6. Set the Chocolate: Refrigerate the coconut bites for 10–15 minutes until the chocolate is set.
