- 2 cups sweetened shredded coconut
- 1/2 cup sweetened condensed milk
- 1/2 teaspoon vanilla extract
For Assembly:
- 24 whole almonds (roasted)
- 8 ounces semi-sweet or dark chocolate, chopped or in chips
- 1 teaspoon coconut oil (optional, for smoother chocolate)
Instructions
- Prepare the Coconut Filling: In a medium bowl, combine shredded coconut, sweetened condensed milk, and vanilla extract. Mix well.
- Shape the Coconut Bites: Scoop about 1 tablespoon of the mixture and form small rectangles or balls. Press a roasted almond on top of each one.
- Chill the Bites: Place the coconut bites on a parchment-lined baking sheet and freeze for 20–30 minutes until firm.
- Melt the Chocolate: In a microwave-safe bowl, melt the chocolate and coconut oil in 30-second intervals until smooth.
- Dip the Bites: Dip each coconut bite into the melted chocolate, coating completely. Tap off excess chocolate and return to the baking sheet.
- Set the Chocolate: Refrigerate the coconut bites for 10–15 minutes until the chocolate is set.
Notes
- Store in the refrigerator for up to 1 week or freeze for longer storage.
- You can also drizzle the chocolate instead of fully dipping for a lighter version.
